Spicy Shrimp Corn Chowder

Corn Chowder with Spicy Shrimp
Thank you for Sharing!

This hearty delicious chowder recipe is adapted from Playful Cooking.  I have added red pepper to it, and altered the spice mixture a bit.  The original recipe calls for Korean Chile powder, which I did not have, so I substituted smoked paprika and cayenne pepper.

Pumpkin Cake with Penuche Frosting

Thank you for Sharing!

The pumpkin cake recipe comes from Chef-in-Training blog.  My only change was to use coconut oil instead of canola oil.  The frosting recipe is an adaptation of Penuche Frosting recipe from Better Homes and Gardens NEW Cookbook.  Mine was from 1981, several (ahem) editions ago.

Apple-Cardamom Brown-Butter Dutch Baby

Apple Cardamom Brown-Butter Dutch Baby

This recipe comes from Martha Stewart Living, October 2016.  Dutch baby is a type of pancake, but it’s crispy edges give it enough of a pie vibe to make it a fantastic dessert, too!

It is a lovely brunch recipe or an easy dessert, just top it with whipped cream!

Shakshuka

Shakshuka

A delicious dish that is easy to prepare with pantry ingredients, healthy, low-carb, and utterly delicious! Serve this any time of day, with bread for dipping and Hot Sauce (I like Cholula) for those who need more heat!

This recipe is prepared stove-top and can be finished either in the oven or covered on the stove.  If you want to finish by cooking eggs in the oven, preheat oven to 375F.

Best Banana Bread Ever!

Best Banana Bread Ever
Thank you for Sharing!

This is the best banana bread I have ever tried.  I found it in Cook’s Illustrated.  It is available at This Link, which will also tell you how they engineered this recipe.  The key to this recipe is to extract the liquid from the bananas (this is NOT DIFFICULT – it happens automatically when they freeze), and then reduce it and add it to the batter.  I always peel and freeze my overripe bananas in a zippered bag.  When I have 5, I know I can make the most delicious treat!  You can use unfrozen overripe bananas if you microwave them (covered) for 5 minutes to release the juices.

Lemon-Buttermilk Ice Cream

Special equipment needed:  ice cream churn

Note:  this recipe requires aging of the custard.  Once you make the custard base, you will need to refrigerate overnight before churning it in an ice cream freezer.
